Tomato Salad

6-10 servings

Ingredients

  • 1/4 cup vinegar
  • 1/4 cup water
  • 1 teaspoon oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup white onion, chopped
  • 1 tablespoon parsley, chopped
  • 3 large tomatoes, sliced thin

Directions

In a rectangular container, layer the tomato slices. Combine 1/2 vinegar and 1/2 water, about a teaspoon of oil, salt, pepper, onions and parsley and pour over tomatoes. Put in refrigerator and let the tomatoes absorb the dressing overnight.
