Blintz Souffle

6-8 servings

Ingredients

  • 1 dozen blintzes (cheese and blueberry)
  • 6 eggs
  • 2 cups sour cream
  • 2 teaspoons vanilla
  • 4 teaspoons sugar
  • 1 tablespoon orange juice

Directions

Preheat oven to 350 degrees.

Grease pyrex dish. Put ingredients in mixing bowl and beat with electric mixer.

Line pyrex dish with blintzes (alternating between cheese and blueberry). Pour mixed ingredients over blintzes.

Bake 1 hour.

Recipe originally from my mom.

This dish is very easy to make. It is a good breakfast potluck dish and it transports well.
