Ingredients
- 10 oz. package of frozen chopped spinach
- 1/2 teaspoon lemon juice
- 1 teaspoon parsley
- 2 tablespoons sour cream
- 1/2 pint heavy cream
- 3 eggs
- 1/2 pound shredded Swiss cheese
- dash of pepper
- pinch of nutmeg
- deep-dish pie shell
Directions
Preheat oven to 350 degrees.
Cook and drain 10 oz. package of chopped spinach. Set aside.
Mix all ingredients together except spinach and cheese. Then mix in spinach and cheese. Pour into deep-dish pie shell.

Bake for 45-55 minutes or until the filling is slightly brown on top.

The quiche is great to freeze to grab for an easy meal another time.
