Spinach Quiche

3-4 servings

Ingredients

  • 10 oz. package of frozen spinach quiche
  • 1/2 teaspoon lemon juice
  • 1 teaspoon parsley
  • 2 tablespoons sour cream
  • 1/2 pint heavy cream
  • 3 eggs
  • 1/2 to 1/3 pound shredded Swiss cheese
  • dash of pepper
  • pinch of nutmeg
  • deep-dish pie shell

Directions

Cook and drain 10 oz. package of chopped spinach. Set aside.

Preheat oven to 350 degrees.

Mix all ingredients together, except spinach and cheese. Then mix in spinach and cheese. Pour into deep-dish pie shell.

Bake for 45-55 minutes, until the filling has slightly browned.

Recipe originally from my mom.

Wrap up a piece or two in plastic wrap and put in the freezer for a future dinner. Reheat the quiche for 2 minutes or until hot.
