Cauliflower Fried Rice

Ingredients

  • 1 head of cauliflower
  • 2 tablespoons sesame oil
  • 1 small onion, chopped
  • 1 cup frozen peas and carrots, thawed
  • 1/4 cup broccoli, chopped
  • 3 tablespoons soy sauce
  • salt
  • black pepper
  • garlic powder
  • 1 egg

Directions

Using a food processor, chop up head of cauliflower so it is “riced”.

Heat oil in a large skillet on medium-high heat.

Sauté onions until tender. Add peas, carrots, and broccoli. Cook until soft. Add cauliflower to the pan. Mix with vegetables and continue to sauté until cooked.

Add approximately 2 tablespoons soy sauce and mix well.

Slide the rice to one side of the pan and scramble the egg on the other side of the pan. Once the egg is cooked, chop egg into pieces and mix with the rice. Add additional soy sauce, to taste preference.

Add salt, pepper and garlic power, to taste.

Serve.
