
Cake Ingredients
- 2 cups sugar
- 1 1/2 cups oil
- 4 egs
- 2 cups sifted flour
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups carrots, grated (~1 1/4 lbs)
- 1/2 cup pecans, chopped fine, same some full ones for garnish
Directions
Preheat oven to 320 degrees.
Put sugar and oil in mixing bowl. Add eggs one at a time and beat.
Sift dry ingredients together and add along with carrots and pecans to liquid mixture. Mix by hand.
Pour batter into 3 greased 9 inch pans. Bake for 45 minutes. Cool.
Stack and frost between each layer, outside and top of layers. Garnish with whole pecans.
Frosting Ingredients
- 1 box confectioners sugar
- 1/2 stick butter
- 8 oz block cream cheese
- 2 teaspoons vanilla
Beat with electric blender.
