Edamame Bean Dip

Ingredients

  • 2 packages of shelled edamame
  • 2 cans of black beans, drained
  • 1-2 cans of corn, drained
  • 1 cup yellow pepper, chopped
  • 1 cup orange pepper, chopped
  • 1/4 cup sweet onion, chopped
  • 5 celery stalks, chopped

Dressing

  • 1 cup of canola oil
  • 1/2 cup of red wine or apple cider vinegar
  • 1/2 cup of sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

Mix all ingredients and pour dressing over them. Let marinate in the dressing at least an hour before serving. Serve with multigrain scoops or your favorite chips/crackers.

Recipe originally from my friend’s mom.

I had this recipe for the first time during one of my friend’s Bachelorette Party weekends. It has become one of my most popular appetizers that I make.
