
Ingredients
- 2 packages of shelled edamame
- 2 cans of black beans, drained
- 1-2 cans of corn, drained
- 1 cup yellow pepper, chopped
- 1 cup orange pepper, chopped
- 1/4 cup sweet onion, chopped
- 5 celery stalks, chopped
Dressing
- 1 cup of canola oil
- 1/2 cup of red wine or apple cider vinegar
- 1/2 cup of sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions
Mix all ingredients and pour dressing over them. Let marinate in the dressing at least an hour before serving. Serve with multigrain scoops or your favorite chips/crackers.
